This recipe comes from long-time friend Sue: she writes "We have four kids
with food allergies and between all of the million different allergies, they can
all eat it. Even non-allergic people like it. It's from "The kid-friendly food
allergy cookbook"....with some modifications
Apple Cake
5 medium apples
2 sticks of Fleischman's dairy-free margarine
1 cup brown sugar
2/3 cup white sugar
1/2 cup applesauce
1 cup rice flour
1-2/3 cup oat flour
1 TBSP baking powder
1 tsp cinnamon
1/2 tsp ginger
1. Coarsely grate the apples and set aside.
2. In a mixer cream together the butter and the sugars. Blend in the applesauce.
Add the flours, baking powder, cinnamon, and ginger. Mix until smooth. Remove
from mixer and stir in by hand, the apples.
3. Pout into well greased 13-inch by 9-inch baking pan. Bake in a 350-degree
oven for 35 minutes. Set aside to cool.
